The Dorrigo Cheese Factory was established in January 2007 by Joshua Billing. The factory specialises in producing a range of unique hand crafted cheeses from recipes created by the cheese maker. With the quality and care each cheese is made from they are said to be reminiscent of the flavour and standard you would expect from much more established cheese regions in Europe. Currently in product are two soft cheeses, the Dorrigo Double Cream and the Fresh & Sharp and two semi-soft cheeses, the Dorrigo Fetta and the Wine Washed Cheese. These have been specifically selected to highlight the quality of milk available on the Dorrigo Plateau. The cheeses are currently distributed in the local area with shops from Lismore to Bellingen and as far inland as Tamworth. This totals 17 shops at present with continual expansion as the factory increases market awareness and penetration. All of these distribution points reflect the Dorrigo Cheese Factories focus on quality food and local produce. Thus the key clientele for the factory has been, and will continue to be people with the passion for premium quality food.
